We never know when the items in the store will be replenished. You can just keep checking back and/or check the merch booth at shows that you attend as the inventory at shows is often different than the inventory of the online store.
Meet & greets are usually before the show but that can always change. If you are selected for a meet & greet from the Church Choir lottery, you will probably be told to be at the will-call window at least one hour before doors open to pick up your meet & greet pass. The pass will contain instructions on when and where you need to be for the meet & greet.

I wish they would release the rest of the dates... If Chicago falls in August or Sept, would be a perfect bday pressie for myself! I wanna try to organize a trip to the US around it. So hard not knowing :(
No, I would expect them to be right after the first string of tour dates that have already been announced (which is 19-Jan through 10-Mar). The August dates you see on the calendar are fair/festival shows which are you part of the Blood, Sweat & Beers tour. On the main tour page the dates that are part of Blood, Sweat & Beers are labeled as such.
